Also to note, the brewpub will open with a limited food menu from their kitchen, focusing on just a handful of dishes (Dessert Nacho’s included), complemented with a rotation of food trucks.
Evil Genius Brewing Company is gearing up for the March opening of their first location, a brand new brewpub in Fishtown at 1727 N. Front St. The new spot will be offering Evil Genius’ classic beers in addition to new brewpub exclusive ones and a small but eclectic menu of delicious eats that will include everything from charcuterie boards to dessert nachos.
Co-owner Trevor Hayward explained that the new brewpub is a huge step for Evil Genius. Hayward and business partner Luke Bowen have been utilizing contract brewing up until now, choosing to handle branding and marketing only to avoid the high overhead attached to starting a brewery.
“This has always been the ultimate goal. It may have took us a little longer to get here than we thought, but this was always the goal,” Hayward said. “We started off with the idea that we wanted to have a place like this, but we also knew that opening this from the very beginning wasn’t going to put us in a good financial position. It’s very costly to build something like this when you have zero sales and no one really knows your brand, so the idea was we build the brand first and then we would get the space.”
The brewpub will feature a multi-tiered seating arrangement which will offer a little bit of everything. According to Hayward, the first section is a more relaxed setting which will include an old tube-style TV and a Sega Genesis that will be sure to spark guests nostalgia. The middle section will be a more conventional brewpub space, with six booths and six high-top tables dispersed along the curved bar. The third section will be a space reserved for private events or seating overflow.
Hayward expressed excitement at the possibilities that the new location will provide, particularly with barrel-aging. “One of the things we have not been able to do since we started is more specialty things like barrel aging and sours,” Hayward said. “We’ve never had a home base to work from.”
The choice of location offers high population density and low cost with the population being primarily young professionals in their 20s and 30s, the target demographic of Evil Genius and other craft breweries.
Evil Genius will be starting with a beer list of pub exclusives that will feature a raspberry Baltic porter, a juniper berry-infused Biere de Garde, a barleywine with maple syrup, a dry-hopped saison, a Mosaic double IPA and an Amarillo pale ale. They will also have a few of their core brands on tap including their classic Purple Monkey Dishwasher. They will also have a gin bar featuring over 20 different gins distilled in Pennsylvania to go along with an assortment of craft tonics and eventually even some house made tonics. There will also be a selection of wines available for those straying from both gin and beer.
The foods that will be available upon opening will include a home-made hummus infused with O’Doyle Rules (Evil Genius’ “Almost IPA”), an Italian hoagie dip, a classic rendition of the peanut butter and jelly sandwich, a vegetable panini and the highly-anticipated dessert nachos, which will feature a waffle doused in toppings. According to Hayward, they wanted to offer dishes with short prep-time so orders are simple and easy to get out to customers in a timely manner.
Evil Genius’ new brewpub will find itself among Fishtown’s the craft beer renaissance when it opens early March. Be on the lookout for upcoming events following the opening.
